I recently brought Karhu Guides and I LOVE THEM! Great for gliding along with a pack across the high country, And fantastic for caving up turns + skating without a pack.
I have 7tm Powder tour releasable step in bindings, and they are fantastic- So much quicker and easier to use as you don't have to bend down to flick up the heal. They are also a lot kinder on the knees as they release (and have a DIN setting!); Although they cost a lot, what's the cost of a knee re-co these days? - just make sure u have a leash on them from day 1!
My mates have fisher outta bounds and 10th mountain; they are all great ski's and will do everything u want them to do.
Ski length; Longer to travel faster and turn harder, Shorter to turn easier and travel slower.

And another thing with the releasable bindings If your humming and haring about the extra weight in the releasable bindings take note that every time you take a step you are lifting less of the ski off the ground, for less time; resulting in better efficiency..
