I have used pretty much the same technique to make/duplicate holds.

Here's some comments from my experience...

Macca's straws make an excellent form for the bolt hole and hold the washer nicely (and cost nothing). Just drill out the holes to size when cured.

Children's powder paint (aka poster paint) does a good job of colouring the resin/sand mix.

Clay moulds are easy to make, but you have to destroy them each time you take your finished hold out. Clay is also full of moisture which is slowly evaporating. This cools the epoxy and can make curing times very long. If you make a mould out of silicon or thermoplastic then you can heat your holds as they cure (I used a cardboard box and a fan heater) and you can punch out a batch of fully cured holds in 1hr! And you can reuse these moulds. Clay is excellent for a proof of concept, but you'd want to find a better method to fill a whole woody.

Flattening the back sides of the holds (ie the bit that goes onto the wall) is easily accomplished by rubbing them on cement, a driveway or a smooth road.
