I have to say Tassie as well. It is by far the BEST place to climb in the summer in Australia. Anyone who has been down here in summer can vouch for that. It sounds perfect for you as well. Freycinet has easy/beautiful bush walks to white sand beaches with super easy to super hard trad/sport climbs on granite sea cliffs. Mt Wellington in Hobart has beautiful/easy bush walks with awesome easy to hard trad and moderate to hard sport climbs in a unique sub-alpine position with spectacular views. There are dozens of crags all over the state including the most popular bush walks to the some of the longest trad routes in the country. Go to thesarvo.com and take a look at the hundreds of routes in Tassie. Friendly locals can show you around as well as put you up for a few days. :)
