I spent about a month in climbing in tassie a couple of summers ago, its great. this info is all based on that time.
Definately get craglets, i found it really useful as a general guide for the area, plus as others have mentioned, its hard to get specific guidebooks for some areas.
Its worth checking out the gorge in Launceston, its a good place to start, very easy access etc.
Hillwood near Launceston is also worth having a look at. again easy access, sport routes at all grades.
You must go to Frecinet (coles bay). i think you can get a guidebook for here. Granite routes, mulit and single pitch, some sport but mainly at higher grades.
Ben Lomond is awesome, and access is realtively easy as long as you have a car. No guidebook (but the main area is in craglets). Fantastic splitter cracks, plenty in grade 18-19. Bring lots of cams.
Mt Wellington (above hobart) has great climbing. hook up with some locals and get directions to the best routes.
Apparently Mt Brown is great, but i didn't get there.
