Please excuse my over-generalising but here's some tips about the types of climbing around Melbourne that I've experienced.
There are quite a few locations around Melbourne all within an hour or so's drive. The most popular IMO are Werribee Gorge (short cliffs - single pitch, range of difficulties, most trad), You Yangs (very slabby and tough on the fingers & toes, a fair few bolted routes, some trad), Cathedral Ranges - North Jawbones (good multi-pitches 120m+ all trad, low-med grades), Camel's Hump (good variety, a few easy, many difficult, mostly single pitch). I suggest you look at an online guide for more details.
Then you get to the good stuff over 4 hrs drive from Melbourne - Arapiles (absolute mecca, the best climbing in Aus IMO), Grampians, Blueys etc. There's also some good stuff in QLD (if you like cracks) and Tassy although I've never been.
Again guides would probably be a good place to look for more accurate info but there's no shortage of climbing that's for sure!
