I would use 2 cordelettes and restacking. And a small amount of the drill sergeant. 3 people untying and faffing about with rope ends on every pitch sounds like a pain and plenty of room for fûck ups. 2nds reflake rope whilst you sort gear. Cordelette keeps your rope out of anchor. I'd just tie the 2nds in off their rope before taking them off belay as well. Or take 2 reversos and leave them both on the reverso they were originally belayed on that pitch on.
