I have two cordelettes. One is 8mm (my original), and the other 5.5mm spectra. I use the spectra one mostly, and the 8mm for when rope-soloing multipitch at the second belay anchor.
I much prefer the spectra one because its longer, less bulky and lighter.
I originally thought like yourself re stepping down to 7mm but decided to go whole hog and stepped down to spectra instead.

Before I got into serious aid and solo I constructed multipitch belays from webbing slings. Its a good skill to have and I enjoy the 'construction work', but find cordalettes faster.
Most belays I reckon one can get by with a variety of slings ..., or simply the rope.
Comes down to personal preference and cost in the end.
