I don't find it a hassle drying food - just put leftover curry/pasta in the dehydrator & next morning its done.

my dehydrator cost $70 & with the number of nights I spend in the backcountry I figured it would pay for itself in ~12months compared to buying commercial dehy meals (plus commercial dehy meals have a scary number of chemicals listed in the ingredients). Always having a few dried meals in the cupboard means I don't have to put any thought/planning into food for last minute trips.

Dehy meals for trips are an easy option in Canada because there is always water available wherever you are staying (huts in winter or hiking/climbing in summer). I can just take a big day pack for a 3 days of hut-based backcountry skiing. Its nice to actually be able to ski properly - not just survival skiing weighed down by a huge pack.
