it takes me 10-12 hours (ie overnight) to dry curry or pasta. I usually dry a chunky vege sauce, then have to crumble it up to put in bags. Once done its dry & crunchy, not like leather. One odd thing is I found that once a dehy meal is more than 12months old (ie dried 12 months ago) it smelt a bit weird, kinda like dry dog food. It still tasted great so wasn't too much of a problem.
