The only real damage I have seen to ply walls was on a 12mm ply wall. Of course commercial gyms use a minimum of 17mm ply which is far far stronger. The small holds that are screwed on directly to the ply aren't really a drama. Very small holds I have seen break but then you just reverse the screws out and attach another hold usually over the existing holes. Would gyms ever need to replace their ply, I don't believe they need to in my lifetime or my kids lifetime. You see because of the engineered structural integrity of the way ply is laminated together it is very forgiving of even major damage.
