Jacket: I don't think the Reflex on my Macpac jkt breathes as well as the XCR in my (over-engineered) Berghaus jacket, but mind you I'm comparing these 2 fabrics while hiking in high humidity cold and wet environments where nothing breathes very well anyway, and to tell the truth I went to wool stuff anyway for this kind of work. The most breathable and waterproof thing I own is my Gore Bike Wear single layer biking jacket, which I also use for ski touring, snowboarding, hiking etc, it's fantastic with just a lightweight icebreaker or similar underneath.

Pants: My Macpac Reflex ones are bombproof and get used for pretty much everything from ski touring to bushwalking to ice climbing, very, very, very waterproof and breathe just fine + they have the old NZ made Macpac brilliance about them. My Paclite pants are also excellent but have loads of cuts and tears in them from crampons, granted this is not what they're designed for (no crampon/scuff patches). The excellent breathability in both pants is probably more because my legs don't have to carry a backpack!

I heard from many reputable sources that Lowe Triple Point Ceramic was the most breathable fabric ever made tho I can't back this up personally.
