Paynes Ford is good that time of year as it has lots of south facing crags. I'd agree that it's worthwhile getting to see the glacier scenery around Mt Cook. And while the easily accessed Mt Cook crags like Sebastapol Cliffs aren't amazing climbing, they're not bad and the scenery is great.
