For Colombia, and Ecuador check out wwe.monodedo.com.
There are two great locations for climbing in Colombia: aroud Suesca, and La Mojarra in La Mesa des los Santos. Besides the main cliff in Suesca there are other areas around like Macheta and Valle des Los Halcones.
La Mojarra has 80+ sport routes on perfect orange sandstone. It is also located in a remote paradise, with great weather for most of the year. The locals there are incredible. One of them is Juan (juancarlossantander@gmail.com) who runs a hostel on top of the cliff.
In Ecuador Cuenca is a great base for outdoor climbing. Hook up with the crew at the Monodedo climbing shop for the info you need.
In Peru, the climbing is around Huaraz which is a great place. There's high altitude sport climbing (~4200m) at Yacca and Hatun Machay. Both have unbelievable settings, and the latter has ridiculous rock formations.
For Argentina, in and around Bariloche is superb. If you can get the low down on the elusive Valle Encantado your life will be better for it. Frey is also world-class but a rack, or someone with, is required. You can also drink wine and climb near Medoza.
I hope this helps. Have fun and take some time to learn a bit of Spanish before your trip.
