if you get all the way up to salt lake city, little cottonwood has nice granite, some single pitch and some multipitch. nothing extraordinary difficult. big cottonwood has more single pitch stuff, but rock isn't as nice.
weather will be fine, climb on the north side and you'll have sun all day. it's chilly but nice.
maple is worth a couple days it will be cold but clear and some of the crags get sun.
la sal near moab will be cold because it's down in a canyon from what i remember
there's one really nice single pitch crack in provo canyon called 'green monster' worth the stop and only 10 minute walk from car.
