Case to case and person to person as Wendy says. I am not likely to take craps loads of leaver slings up the watchtower faces at Araps, but I would if going to a new big cliff where it may not be easy to scoot aruond to the top and rap over at the end of the day if you back off something. I am not likely to take water up a two pitch climb in the middle of winter, but would in the middle of summer on a longer route. Water bladders heaps better than bottles.

Probably the most important thing to consider no matter where you are is appropriate clothing. A thin windstopper/rain jacket packs down small and fits in with a 2 L bladder and can make a big difference if you take longer than expected or the weather changes. Also a hat under your helmet and lightweight long sleeves/pants can help fight off a bit of exposure/heat exhaustion in summer.

Otherwise I always take the std set of prussics and 5 lockers in total (overkill but you can get very light ones nowadays).
