Believe it or not there is actually some decent bouldering out at Chapman, down near the horse paddocks towards the Mt Arawang end. You drive in there through Kambah, park at the hors paddock carpark and you should be able to see the boulders up on the small hill in fron of the ridge.

There are some steep and hard problems, strangely enough the best ones are chipped/drilled. The rock is not actually granite but a similar coarse grained volcanic rock called Rhyodacite - the same stuff as Kambah rocks but a it rougher because no river weathering action.

If you can be stuffed to head up to the main hill (the boulders should be obvious) there are actually some quite large (one of them is 4-5m) boulders but thes are mostly vertical/off vertical and very sharp on the tips, not as good as the area I have described above.

Chris and sam etc website don't have their guide up on their canberra granite website yet so you could perhaps peser them for more info. Soem good probles up on Chapman Ridge just up onthe hill behind Niblo place (this is described in the ACT Granite guidebook)
