Glad I was of help, and nope i can't really help on the cycling front. As to other touristy things, I'd definately recommend going to the Grotte Demoiselles if you go climbing at Thaurac. Its a massive show cave and its absolutely awesome. Theres also some excellent picturesque kayaking, and a dip in the River Gard (Russan, Colias) or Herault (Thaurac) is always refreshing after a good days climbing. I'd also definately recommend a trip to the gorge du Tarn or Gorge de la Jonte, as mentioned previously. Theres some really nice muliti pitches (and theres always the novelty of having those massive vultures soreing over your head - and no thats not as bad as it sounds), and some very interesting rock formations perched on the tops of the gorges. If you head over the Calanques way, watch out for the climbing restrictions that they put on during the summer (June onwards). Climbings pretty much banned in the area due to the fire risk, this can also be the case at St. Victoire (nr Aix en Provence) and even at Buox, if its a very hot summer. NB theres both Trad and sport at both St. victoire and the calanques. Anyway it will depend on when your going.
