Plenty of great mountain biking in France, I think there's a fair bit around Montpellier. The French cycling federation has setup many marked trails in the countryside. You can have a look at: http://www.ffc.fr/a_VTT/a_SitesVTT/index.asp sorry it's in French but I'm sure that the tourism office in Montpellier will speak english (pretty worrying if they don't!). The signage is usually well maintained and they provide services as well in some centers. Mtb is really awsome in France as forests have many more tracks that I have seen in Australia. So if you like smooth and fast single tracks, you'll be happy! I guess some people also ride on the road, but why would you do that when you can avoid cars?
