A ripper book for beginner climbers is 'Rockclimbing - getting started" by Glen Temptest. Written for Australians. It'll help you get your head around the different sorts of approaches to climbing like top-roping, climbing bolted routes and climbing naturally protected routes, and will give you an idea of the gear you need for each.

Assuming you start by top-roping things you can get access to the top of, you'll need a harness, rope, belay device, slings, locking carabiners and of course a climbing partner.

Bogong on little bourke street has the biggest range of gear in Melbourne* They would be a good place to start. Gear-wise, you get what you pay for. All the gear meets the same minimum standards re safety, but the more you pay, the better finished it will be, the longer it will last and the better the performance when you use it.
