would recommend Armidale rather than Giraween.
Gara Gorge has an abundance of granite faces, a useful contact at mountain designs (if Gordon still works there), a uni with a mountaineering club ( & a climbing wall where you can find other climbers) & camping at the gorge. If gordo has moved on from the shop, someone will be able to help out.
Plenty of bouldering, check 'uncarved block' website for bouldering info & maps.
There's basalt (crack arete crack arete etc) at Ebor falls & a pub.
There's also the chandler wollomombi ridge, usually done as an abseil off chandler falls, a walk or lilo down the river then an exposed ramble up the ridge. Would recommend a rope for this, no gear needed.
It's also about half way between sydney & brisbane.
