Same reason your heart rate goes up when you're watching a horror flick, it's a counter-productive emotional response. This symptom of pussiness will fade to a certain extent as you become 'arder.
Well, I have super wide, short feet (US7, EE width) and the Shaman was the first shoe I could size pretty tight without having to bite down on a stick to bear the pain. If you have hobbit feet I would give them a go. Time will tell if they perform ok.

Surely that depends on what traverse? I struggle to imagine my heart rate going to 150 on a lap around good morning arapiles. Anyway, areobic vs anaerobic respiration isn't directly related to heartrate, it described pathway of energy production in the cells. Your breathing and your heart rate goes up in response to levels of co2 and o2 in your blood, and it will happen pretty damn quickly once you start exerting yourself. Anything that involves you getting scared or excited is going to add to that from adrenaline release, which is triggered psychological factors as well as physical ones, and is designed to increases oxygenation and circulation to muscle for fight or flight reponses.
I have little stumps for feet. They are basicaly half as wide as they are long. I swear by Moccasyms. I know they say that they are built on the anasazi last, but i think their marketer was on drugs when they wrote that. i can't get into lace up anasazis to save my life. The velcros are possible, but excruciating. The moccasyms on the other hand, just mould to your feet, so whilst i do need plastic bags to get a new pair on, within three weeks, they are a perfect fit. I've tried a truckload of other shoes over the years (including the testarossa, i just can't take to such an agressively shaped shoe, it doesn't have the same feel) and I still come back to the Moccasyms. I'm on about pair no 9. I did love the old pink boreal lasers though. Why did they stop making them???
Had a look at the Shamans though. They are synthetic, and I don't like synthetic shoes, they just don't mould to your feet in the same way. And they don't make them small enough. What is it with only producing a shoe down to size 4? And then whilst they make a women's one which does go down to my size, it's lower volume, thus I presume totally useless for my fat little feet! Oh well, good thing they still make moccasyms.
