Hi coming out from Canada in March April and going to the Arapiles, Mt Buffalo and Grampians, what campsites would you recommend?
is it possible to reserve sites and how?

Arapiles - The Pines, just show up
Grampians - Stapylton seems to be the most popular base

Lots of info on Chockstone if you search, but I'll point you in the right direction/s.

Arapiles has plenty of camping in the Pines (at $4 per night) and you can always find a spot. Easter (March 29-April 1) is a major holiday here and will be busy. No marked sites, no reservations, so just show up and pick a spot.

Buffalo requires campground reservations (Lake Catani campground) and you're advised to book over Easter, but otherwise you can probably just show up as it's not peak time. Refer to http://parkweb.vic.gov.au/explore/parks/mount-buffalo-national-park. Marked and numbered sites. Online bookings at http://www.parkstay.vic.gov.au/accom_rates/mt-buffalo-national-park/

Grampians is a big area, so you'll choose a campground depending on where you want to climb. The most popular campground in the Northern Grampians (Taipan Wall etc) is the Mt Stapylton campground, Check out http://parkweb.vic.gov.au/explore/parks/grampians-national-park/things-to-do/camping which has info and links. All these only have basic facilities (pit toilets, a bucket shower if you're lucky) so if you want more civilised surroundings the options are to go to one of the commercial campgrounds. For Dreamtime wall (worth a visit), Jimmy's Creek is the closest official campground.

There are also some bush camps (no facilities) in the Grampians known to climbers if you're fully self-sufficient (incl water) and want to save money.

Weather-wise, the best time of year to come. Be aware the Victorian school holidays run 29 March to 14 April.
